I don't know if this is possible because I'm not sure if it's a hydraulic assist or full hydraulic (no direct connection to steering wheel)............
Reverse the hoses so when you turn left the truck goes right and vice versa. That would tell you the problem part.
Not a bad plan. I don't know how difficult it would be to swap and bleed the system again.
