Since i'm on this health kick we're not doing anything real spectacular for X-mas dinner. I'll be making a 15 lb Turkey for my wifes side of the family and us. Probably have some mashed spuds (which I won't be having)... home made spicy cranberry sauce that my mother inlaw makes. Some type of bread (which I can't have) .. lol.... and i'll be making swedish meatballs as an appetizer. Possibly some stuffed mushrooms as well.

What on everyone else's list?

I've been craving some good ol' turkey! Didn't get enough during T-day.

This year we're doing a "Christmas Brunch." the 2 things I'm in charge of is smoking a Prime Rib and smoking at least 2 packages of Costco bacon.

Doing some roasted ducks this year on the rotisserie, did a Canada goose last year turned out good! $Beer Chug\'n$

This year we are doing a turkey and some regular stuff to go along with it. Stuffing and potatoes. It will be me and the GF's first x mas together so it should be something special for us ! Just wish I had more money for a few more presents .

Reminds me of the Chevy commercial I've seen lately, salesman looks like he could be Santa, walks up behind a customer and without looking at him says he's a deer hunter.

I have a young family and I want to start a tradition this year to have some sort of game meat that I have never had before(once I have tried most of them we will switch up the recipe)

yota87truck that is a great idea, have you tried elk, antelope, venison or bison? those are usually not too difficult to find.. I LOVE Elk meat...

freds40 your brave for Q'n that prime rib! lol.. i'd be too worried of over cooking it or drying it out. If I ever do a prime rib i'd do it on a rotisserie.

This year's turkey will be getting a very basic brine and then just good ol' salt/pepper before it goes in the oven.

I told my wife that if I can keep eating as healthy as possible until my b-day then we'll go somewere special for dinner. I've got 2 long months

I got my wife an authentic Zojirushi NP-HTC10 Induction Heating & Pressure Cooker rice machine for Christmas, so... I'll be receiving some more incredible meals from her very soon

Tamale's and menudo with my gf's family and turkey with all the trimming's at my parent's house. I'm already thinking about those tamale's!!!

Not worried about it. Simple smoke, rest, and sear. Did a few fillets a couple of months back and they turned out awesome.

Yea, we will start with the basics. My family(parents) isn't much into hunting. I will probably get into it eventually. I have had elkburger but that is it.

We did prime rib last year. To many of the the girlfriends family members like their meat well done for me to do it again. When people ruin good meat I paid for I get irked. If you want something overcooked and tough I will burn you a hamburger and save the money.

This year I decided on beer cheese soup, ham and homemade pretzel bread.

Johnny Boy, post up pics and your recipe for the beer cheese soup. There is a restaurant behind my house that sells beer cheese soup, and its to die for.

I'll catch myself walking over and getting a bowl of the soup, and a beer.

I want to do a prime rib on the bbq. It can't be that hard, the meat is about the same texture, and size as a pork shoulder. And if they want it done more, just give them some AuJus to finish it off in.

We are doing some ham and taters. I really want to do a big fat pork loin, but the kids and wife really want a ham. So, that gives me some time to drink more beer.

Prime rib is easy. It is intimidating because of the cost, but if you pay attention its all good. I have cooked it in the oven, in a smoker, on a BBQ grill, and on a pellet smoker

Humph!! Now I get to be a bachelor, no Christmas dinner, its turned into a Christmas Eve dinner. She'll be there in the morning on Christmas Day to open presents then she's going to my daughters in Simi.

swedish meatballs where a big hit, I made enough for 3 batch's.. I took some over to my parents house yesterday morning, last night at my sister in laws and we're making a batch tonight for xmas dinner w/ my inlaws @ our house.

turkey went in about 30 min's ago, should be ready around 4 'ish.
