We are deep frying our turkey this year too...i got 2.. a 10 pounder and a 12 pounder

I have a 34 qt. Bayou Classic cooker using peanut oil and cajun injector marinade.

We are also having goat cheese salad with cranberry port dressing, figs wrapped in proscuitto, green bean casserole (yuck!), mashers, butternut squash and apple soup, pecan and maple bourbon pumpkin pie

pickle wraps!!!! spread some cream cheese on a piece of lunch meat (turkey,chicken,ham) put a pickle in it roll it up and ENJOY! if you havent tried it..... DO IT!

Just a heads up for cheapskates like myself:  Safeway usually has the leftover turkey meals on sale dirt cheap the next day, and they're pretty frickin good!

OH hell ya, you read my mind!!!  But I'm smoking mine.  I'm trying to convince the wife to not get a big bird.  In the smoker it's half hour per pound, the one I did in July took 10 hours.  And I don't want to be up at 3 in the morning!  But if I do, I document the smoking with pics!!  I've got to set up my covered spot in case of rain, since I don't want to fill up the shop with smoke.  We will do the traditional stuff.

If you're going to deep fry your turkey, make sure it is thawed out completely before dropping it in hot oil.  Did you see the show about it called Warp?  Ice melting to water and expanding into a gas creates a nice hot oil splash that ignites if it hits an open flame or burner.

We're having a pot roast type thing and some veggie thing instead of turkey.  My wife is a fairly new non-veggie and doesn't enjoy poultry at all.  I'm not a huge fan of turkey myself so why deal with the huge mess.

I'm a firm believer that holiday meals are way overdone and most people would enjoy the holiday the same without having weeks of leftovers.  We're trying to minimize the number of things on the table and only going with the favorites.

we're cooking two birds in the oven @ the parent inlaws house along with probably potato salad, mashed potatoes, garlic bread, salad, cranberry and stuffin'

My family is cooking Soupah (SP?) which is a family tradition for this time of year.. mmmmm good!

can't wait for leftovers.

So the deep fried turkey was excellent...most moist and tender, butter bird i have ever had

I injected creole butter into it the night before..rubbed it with Tony Chachore's cajun rub then topped with the traditional melted butter, garlic and cayenne pepper
