This is a traditional Indian dish that is quite easy to prepare and very tasty...Im not a big califlower guy but am a firm believer in the idea that ANYTHING deep fried is good!
GOBHI PAKODE
(califlower fritters)
Ingredients:
2 hd califlower, trimmed florets
Batter =
2 cups chickpea flour or all purpose flour
2 tbs ground coriander
½ tea black pepper
1/4 tea cayenne
2 tsp salt
2 tbs oil
1 ½ cup water
Method:
Parboil califlower until half cooked and shock in ice bath. Set aside until ready to fry.
Place flour and spices in a food processor and pulse to mix well adding oil.
With processor running, add water until well mixed batter is correct consistency
Cover and let rest for 30 minutes.
Heat fryer to 375. Coat califlower with batter and fry until golden.
Drain on paper towels and serve.
