Salmon Pesto
However many fillets of Salmon
Enough pesto to coat them about an 1/8" thick
Put the salmon in a baking dish. "Ice" like putting icing on a cake, with the pesto about an 1/8" thick.
Cook at 350* till the salmon is flaking. usually about 15-20 min.
Then, if you like, broil for just a tad to brown the pesto topping. But watch that you don't burn it.
Yum Yum!
This makes me wanna go out and brave the cold again to catch another salmon

, cause I don't think I can bring myself to buy store bought salmon.
I'll also hafta try your crack pot roast too, modified a little since I hate mushrooms. I love cooking up something in the crack pot, especially for the smell when you wake up in the morning! I don't recommend doing so with a pork roast though, not near as good as the beef

Another personal favorite: drive to little caesars, buy 3 hot-n-ready pizzas for $5 each, take home and eat all week!
Don't forget the trusty crusty george forman grill either, those things can do a really good job on a steak or pork chop and are pretty quick too.
