michael,  i think you should  pull the back glass,   cut the  middle section of the cab  out  and  build a  kinda  box  around  a 3rd seat  where your gas tank is now,  moving the gas tank back  this way  you could have a  3rd passenger

like shadycrawler did his truggy
use a  old hood  to make a roof  over it  so if it rained :dunno:   no need  for doors   just some sort of  side  so the 3rd seat would have a  cup holder
