I just have to point out, since so many folks say it like this, that you're actually saying you care enough that you COULD still care less!  The right way to say it is I COULDN'T care less, because you've then hit the bottom of caring and could not possibly care any less

yea, im kinda in the habit of typing whats faster as long as it sounds phonetically ok, or looks phonetically ok. i guess i didn't say vowel-starting noun, its one of those things you kinda think but then it doesn't quite make it to the (theoretical) paper...
