I've beat my brains out on this topic for the last two years.  I too am very displeased with the whimpy power of the 3.0L V6.

My searches have come up with two solutions: 
#1 Swap the motor for a 4.3L GM
#2 Swap the motor for a 3.4 Toyota

Advanced Adapters has the stuff to swap to the Chevy motor.

I am swaying towards the Toyota 3.4.  Off Road Solutions has the necessary kit to make the swap http://www.offroadsolutions.com/

Started wheelin' in 1976 when I bought a Scout II new off the lot.  I've since switched to Toyota.  I like rigs that I can travel in and still take off road.
Small tires = bigger challenges.
