Official Thanksgiving Day Meal?

I didn't see anything posted yet, so what's everyone doing for Turkey day?

Post up your Thanksgiving day feast and maybe we can swap recipes/idea's.

I'll be doing the traditional Turkey in the oven with slabs of butter under the skin, plenty of salt and pepper along with some chopped onions, garlic and fresh thyme stuffed inside. Along with some outstanding Turkey dripping gravy

For starters we'll be doing a sausage, onion, garlic and cheese stuffed mushroom
Deviled Egg's are a must..
Mashed Spud's w/ Bisquits
Either grilled Zucchini w/ a little bit of EVOO, salt/pepper and parmesan or baked Asparagus w/ minced garlic, parsley and salt/pepper (havn't decided yet)
Mixed fruit salad

And of course my wife's awesome home made Apple Pie!

going lazy this year just ordered a prime rib dinner from the store and thats about it we rarely have people over for thanksgiving and to drink some moose drool beer

bakin the big bird,  mashed tators, candied yams, green beans, deviled eggs :thumbs:
we always make some "cornbread dressing" with boiled till it falls apart chicken, however since last Thanksgiving ive found i have an allergy to corn, SO this year we'll be cutting the cornbread in the dressing/stuffing down using croutons and couscous, but with some cornbread to retain the flavor, along with the chopped and grilled onion and celery


and CRANBERRY SAUCE :hyper:

So, far we are having T-day on the 23rd, since I have to work Thanksgiving.  Oh well.  We will do turkey enchiladas with the leftovers for Thanksgiving day.

But our plans are for me to grill/smoke mine!



And I do my potatoes on the grill and then smash them, yum!!  They caramelize in the foil and that adds extra flavor. 
And all the fixings.  I'm not sure what all the wife is gonna do, but I'll be outside tending to the bird, and drinking!!  :beer:  Usually I find a good book to read also.  But I haven't found one yet.  But I did get Mitch Albom's latest so we will see.

What temp and how long do you cook that bird???? 

I have a feeling Santa's bringing me the Char Grill Propane/ Charcoal dual grill this year and I can't wait to cook w/ charcoal again!

Nate, I can make Redding in 8 hours!!   :yesnod:  Thats with kids.

I cook the breast to at least 170* and thigh to 180*, that's why I have two digital thermometers.  The thigh (dark meat) is more dense and takes longer to cook up to temp.  To cook on a slow smoker, you want chamber temps between 225-275*, and it takes roughly 1/2 hour per pound to get up to temp. 

And for all you that want to slow smoke do a google, there are tons of sites and forums that will give alot of good info, especially recipes.  :eyebrow:  But here are some of my favorite.

just got back from the grocery store,  Thanksgivings getting expensive!

got a 20lb turkey (because I love turkey BLT's after T-day)

We're going to my parents around 10am and having supa (dunno how to spell it  SOUP-AH) 

Then i'll be heading home around 1 or 2 to throw the bird in the oven.

Tomorrow i'm gonna slow cook a pork shoulder/butt and make pulled pork sammy's    mmmmMM!

I'm going to England for 5 days on Wednesday, I'll eat some fish and chips with some good English beer or something.

Looks like this year it's going to be at the in-laws house with everyone bringing stuff - potluck style.  I'm making red mashed garlic potatoes and my wife is making a couple pumpkin pies.  I know there will be plenty of turkey and beer and other good food if my sister-in-law is cooking.

We just did a Thanksgiving potluck at work yesterday with part of it catered.  The catering company made a corbread stuffing with pepers in it.  It was the best stuffing I ever had and people tell me I'm a food snob.  I need to get the recipe.

I'm all set up for tomorrow.  I'll post pics of my smoking setup.  As soon as my step-mom gets the land re-surveyed and gives me the shop, I'm gonna build a permanent covered area off the side for smoking in the weather.  So, I got my green house frame covered in tarps.  I'll be up roughly 4 am stocking coals.  For my bird.

Wow that's awesome FFC! 

We're going to Brian's grandmother's at Noon for filled pork chops, and I'm not sure what else she is having.  And then my Dad is getting a bunch of stuff from the local rib shack like ribs, chicken, and pulled pork.  He'll also have macaroni and potato salad and I'll make my calico beans.  So not really a traditional Thanksgiving meal anywhere, but it should be good anyway!  I think my Mom is doing a more traditional turkey meal but she's also doing hers at Noon on Thursday so we'll have to just stop in there for leftovers, assuming we ever get hungry again.  LOL
RIP Kyle, we love and miss you man.  :smooch:

Cheesemaker, my camera's acting crazy. I pulled it out, went to take a picture and the camera just keeps reverting itself to "favorites"

As soon as I try and turn the camera off, it immediatly turns back on and goes to favorites and I can't get it to stop...... weird..

It didn't turn out like I expected. The flavors were amazing but it didn't break down into "pulled pork"  so I cut it into really thin slices.

I think it was because it wasn't submerged in any kind of liquid. Once i've finished this one off i'm gonna buy another and throw it in the crock pot with some Heineken, water and spices for 10 hrs. I think that'll do the trick...

Just got done eating our meal!!

From earlier today.  Found a trick, to smoke a turkey, let it warm up before putting it on the grill.  Wife was up at midnight taking care of the bird, and it was still a little frozen, so I had her just leave it out on the stove.  I put it on the grill at 5 am.  And I had to slow it down, cause it was cooking fast.  I could have slept in.  :rofl2:




And my little covered area to smoke in, whatever the weather.

I got it to an internal temp of 175*

I was told for regular pork you want an internal temp of 165* and for pulled pork your shooting for 175*

That turkey looks amazing!  Have you ever tried anything like that with something like a grouse or some pigeons?

I'm not really into game birds.  Chicken or turkey.  And this is my third one I've done.  And I learned some on this one too!  If the bird has been out of the fridge for a couple hours, then it cooks up faster.

Well duh  :haha:  If I had a smoker setup and my freezer hadn't taken a dump, I for sure woulda found a way to pay for my hunting license this year.  Stock up on grouse, pigeon, quail and dove and have a nice little smokeout  :smokin:
