What's for Dinner

I'm always looking for something different to make for dinner. I like experimenting with new recipes (much to Mark's dismay sometimes! :rofl:  ) so I thought it might be interesting to share some meal ideas. :meal:
I'll start with one I found on Emeril's Gourmet Sausage site. It is REALLY good.

I couldn't find escarole the first time I made it so I used Kale instead. The next time I used escarole, but I actually liked it with the kale better.
I also couldn't find the kicked up smoked sausage so I used both an Chicken and Apples sausage and a Spinach and Asiago Cheese sausage. Both were great.

Kicked Up Tuscan Grains & Greens with Sausage

1 Package 12.8 oz Emeril's Kicked Up Smoked Sausage
2 Tablespoons olive oil
4 Ounces fresh spinach coarsely shredded
4 Ounces escarole coarsely shredded
2 Cloves freshly minced garlic
2 Teaspoons oregano
4 Tablespoons chopped parsley
3 Cups chicken broth
4 Ounces medium size pasta shells – uncooked
½ Cup uncooked long grain rice
½ Cup dried quick cooking barley
Freshly grated parmesan cheese (optional)

Preheat oven to 350ºF.
Place olive oil in 12 inch skillet over medium heat.
Add Emeril's Kicked Up Smoked Sausage with the casings removed.
Brown the sausage until no longer pink.
Add spinach, escarole and minced garlic to the skillet. Cook until greens are wilted (approx. 2-3 minutes) and reserve.
Place chicken broth and oregano in a saucepan and bring to a boil; reserve.
Place uncooked pasta shells in bottom of a 12 inch casserole dish.
Spoon the reserved cooked sausage and greens over the pasta.
Sprinkle the rice and barley over the greens.
Stir in reserved broth.
Cover and bake in preheated oven about 40 minutes until the grains are tender, and most of liquid is absorbed. Remove from the oven, add chopped parsley, stir well.
Serve immediately (with grated parmesan cheese if desired).

Sounds great MrsW... I usually cook whatever comes to mind.  I love throwin together something that I could never make again cuz I just start throwin stuff together.

Chucked a pigeon and quail on the barbecue tonight, figured I'd throw some hashbrowns on tinfoil and see how they came out.  They would have been much better if I'd pulled them 5 minutes before :smack:

I bought some bone-in rib eyes the other day, about an inch thick. I put a little kosher salt and garlic powder on them and threw them under the broiler (about 6 minutes a side)...while they were resting I shredded some (good) Pecorino Romano (about 40% coverage) over one side and added some freshly cracked black pepper. Sauteed 'shrooms and hominy rounded out the meal.

I've got some lamb that's been in the fridge for awhile.. so we may BBQ that up tonight. Fried potatoes with chopped onions and bacon thrown into the mix... and of course.. a cold Corona to top if off..
