Bleed the air out of your cooling system.  No seriously.  Air in the cooling system will have wacky effects on idle speed, as the bypass valve is controlled by temperature, and if theres air around it instead of coolant, it gets a false reading and freaks out, basically trying to cold-idle when your truck is warm.
