I don't think noise would be too much of an issue, especially if you plan on using carpet later on.  If you're having somebody do it for you they can lay it on as thick as you want, and it can either be smooth or textured.  The texturing isn't natural but is actually done by making quick passes over it to make it chunky.  The biggest downside I see is the cost, that stuff isn't cheap!

I would like to have the inside of my cab done, floors, back wall and roof and inside doors.  That should make for a fairly quiet ride!
