Mainly, making your own jerky in the oven.  Have you tried it and how well did it work?  Not interested in your recipes as everybody has different tastes, just curious about the actual cooking techniques and outcome.  And go  ;)

I have done this with beef and deer, both turned out quit good.  The trick is marinade for 24 hours, hang it from the topmost rack, and put a drip tray under it.  Put it on the ovens lowest setting, and crack the door slightly.

You can get a dehydrator for about $25.00
YOU ONLY NEED TWO TOOLS IN LIFE - WD-40 AND DUCT TAPE. IF IT DOESN'T MOVE
AND SHOULD, USE THE WD-40. IF IT SHOULDN'T MOVE AND DOES, USE THE DUCT TAPE.

IF YOU CAN'T FIX IT WITH A HAMMER, YOU HAVE AN ELECTRICAL PROBLEM.

alton brown has a good way of doing it in the oven. i've only made it once in an oven and basically did the same as above.. lowest setting and cracked the oven door a little. turned out good.

My wife was Lao, she used to make a jerky-ish thing dried outside in a homemade frame. She just called it, appropriately, dried meat. You could eat it as it was or my favorite is to dry it, then fry it. I know it not an oven, but you can make a lot of meat quickly.

I have a food dehydrator by Rosco the ones you see on tv haven't used in years.  I do remember additional trays made them dehydrate slower and made them easier to rotate and keep track of time. Other wise you had to rotate every 4 hours through out the night and day. So more is better..

We always use Alton Browns other way to make it, with a box fan. We marinade it for 6 hrs, then lay it out on drying racks over a box fan. Turn it on high for 12 hours and enjoy.

If you have an electric oven your golden on the lowest setting.  Depending on how thick your meat is 8-15 hours just keep checking it.  Gas oven....... didnt work so well for me.
The best bet is to go get a dehydrator or use the Elton Brown method (I havent tried it but it looks like a cool method).

Shamb

 well nate, where's the jerk-E?!
