Those harnesses are doing a 
tone more than a 12 wire hook up.
Maybe more than 12. Can't remember exactly but not much more.
What do they do that is a ton more than the basic functions such as tach, gauges, power, brake light,etc. Not trying to be argumentative. Genuinely curious.
