I am looking to replace the clutch in my 87 Toyota pickup. I was wondering what would be my best options. I am looking for a crisp pedal, easy engagement, and something that will hold up if I need to get down with it.

Also does anyone know of one that release more towards the bottom, that's what I had in my old truck and really liked it.

Goldrush

go with our 8 7/8 1200 clutch lb. We sell the heck out of them and work really well. It acts as a stock clutch regarding the pedal pressure

Get what Zak aka Goldrush suggested.  I have that one, but the turbo version, and its as smooth as butter, but when you want it to hook up, it will engage hard if you like!!
I've hammered mine, and I've yet to get it to slip.  It will stall the motor out, before the clutch will slip.

Just make sure you get the 0.026" step put in the flywheel, and you will be golden.  (iirc)
