and with a 3" lift on the truck are the "long" hoops and 14" shocks ideal?

yes, sold in pairs, 3" lift probably 12" shocks, there are a lot of variables.  I run rears up front and find that 12" shocks have to be set just perfect with bump stops in order to not top or bottom out.  14" are way easier to set up, more wiggle room.

how much travel did your setup give you?
and yeah i was think 14" for the wiggle room and easier set up..all gain no loss.. correct?
and i find 2 valvings available..175/60 and 255/ 70.. i want soft but not horribly soft, so im not sure if the 175/60 would be "too soft" or if 255/70 is "too stiff"
im curently running rancho 500 rod hall edition
thanks you by the way

Those numbers are in reference to rebound and compression forces.  I'd go with more rebound damping any day.  Oh, and we're talking leaf springs here, they aren't going to offer huge travel, but you can get them to work pretty well.  The thing will be to not let the dampers top or bottom out, and that comes down toy your individual specs.
