I found a Ramsey 8000 pound winch for $500 and it is hydraulic, is this worth it? if it is, has anyone ever hooked one up before?

I'd save your money.  #1 Only works when engine is running.  Usually after a roll over, this isn't the case.  #2 They are sssssssssslllllllllloooooooooooowwwwwwwww.  #3 They are sssssssssllllllllllllloooooooooowwwwwwwwwww.  Get an electric winch, run dual Optimas and you are in there like swim wear.

There are certainly pros and cons for either electric or hydraulic ... biggest selling point is the fact that the toyota power steering pump isnt up to powering a winch, so i was told by a milemarker rep...

Unless you are up for upgrading the pump you have the answer right there:

get an electric winch

if I were to do it, I would get a 1 ton power steering pump off of a Cummins or something... I would assume that would move it.

But I will most likely see if I can find a deal on a nice Warn or something.
