When I first got it running I set the intial timing to zero per the manual.

Which manual states this?  Mine calls for 5 degrees for my 91 and 8 for my 80, which seems happier around 10 with a setup like yours:  mild to mid cam, weber 32/36, tri-y header and open 2.5" exhaust with no cat
