freds40 your brave for Q'n that prime rib!  lol.. i'd be too worried of over cooking it or drying it out. If I ever do a prime rib i'd do it on a rotisserie.


Not worried about it. Simple smoke, rest, and sear. Did a few fillets a couple of months back and they turned out awesome.
