I don't think that anything you changed could have caused it to flood out. I haven't done much with the 2.7, so I don't know what triggers the ECU to fire the injectors. I know that they changed things a few times over the life of the engine as well. Could be a crank or cam sensor, or the distributor itself.
Do you have a noid light? You need to see how often your injectors are firing at a given RPM, or how long they are staying open. Possible bad ECU IMO.
