To aswer your question, yes those Holley's work well.  I have a buddy that has the 770 on his 454 and with no jetting or anything it works just fine.  Good power, no stalliing, good at altitude, etc.  I'd say the smaller one 650CFM (IIRC), would be a good choice for a stock or mildly built 350.  It won't have the top end power of the bigger carb, but the low RPM response should be better.
