ive always heard  1cc per  pound of rider,  for  beginners.

my buddy recently  got a pair of honda 230's   and his wife  is 5'7"  and  its a little more than shes comfortable with.   even though  shes riden befor,  i suggested  lowering the  rear suspension  so she would get more  control  when  riding slow  so she woulndnt  keep  beating her shins up
