This is how I started getting my charcoal going. Red hot in about 4 min.

I used to use my side burner on my gas grill to start a chimney full of briquettes.  Until the gas grill finally died!!

Briquettes are the way to go, and what i do now, is fill the chimney and light and walk away for 20 minutes.  There is always something that can fill that time, making the taters, a drink, a few laps around the yard on the rider and various other things.

I cold smoked some cheese last night. My fist try. I did some Havarti and some Gouda. Turned out nice.

When i cold cheese I vacuum pack it and keep it in the fridge for a month before eating.much better after a little age time

Nate I picked up two 250 gallon oil furnace tanks last year.  For FREE!! 
I want one as a vertical smoker, and one as a grill.  And mounted on a trailer!!  :thumbs:

Wainiha,

I'll be making pulled pork, ribs, tri tip with some sides... slaw, roasted poblano and cheddar corn bread muffin, probably some baked beans and/or potato salad.

I'll toss some pics up.

Did 6 lbs of sous vide chicken wings today that I finished on the Weber. Dry rub, butter/parmesan/lemon/butter, roasted garlic buffalo and a home made bbq sauce. Along with smoked spare ribs, slaw, potato salad and two types of baked bread.
