Dave, mozzarella doesn't age out to well. Its what we call a "young" cheese. But it can be smoked. It's a little tricky. We have experimented with it here at the plant, with mixed revues. It's one that will need to be tried with many different woods to find the one that works well. I emailed Shane (Shamb) and he said he has been REAL busy with things. And hasn't had much free time.

I just found a old oil tank for FREE!! I will get pictures tomorrow. I was gonna grab the trailer and go get it after work, but I called and he said it was a 1000 gallon tank, and very heavy. Got there, it wasn't as big as he was saying. I came home and grabbed the trailer, and after work tomorrow, I go get it. Would have gotten it tonight, but my toolbox was in the way. I've got a pound of salmon sitting in brine gettin ready for the smoker this weekend. Did some short ribs the other day on the propane grill. I know propane is for losers . It was a free grill though.
