I am Making myself a cold smoke generator from some 3" copper pipe I salvaged from a job. Any tips before I start cutting parts? I want to do some cheese and will definitely need any advice you can give me Cheesemaker. :psss:

Yo Cheesy mc cheese  :cheese: can I age Mozzarella the same way I can age Cheddar ??? I get it in the vacuum sealed package but I was wondering if it would be the same process, leave it in the original package untouched  :disturbed:

Dave, mozzarella doesn't age out to well.  Its what we call a "young" cheese.  But it can be smoked.  It's a little tricky.  We have experimented with it here at the plant, with mixed revues.  It's one that will need to be tried with many different woods to find the one that works well.

I just found a old oil tank for FREE!!  I will get pictures tomorrow.  I was gonna grab the trailer and go get it after work, but I called and he said it was a 1000 gallon tank, and very heavy.  Got there, it wasn't as big as he was saying.  I came home and grabbed the trailer, and after work tomorrow, I go get it.  Would have gotten it tonight, but my toolbox was in the way. 

Here is ideas I have for it.  Not sure which.

I've got a pound of salmon sitting in brine gettin ready for the smoker this weekend. Did some short ribs the other day on the propane grill. I know propane is for losers  :down:. It was a free grill though.

First thing I think.  Vertical setup gives more room for heat control with racks set higher or lower.  Fill it with different items at different heights according to desired smoking time.

Do you air dry your meat/fish after the brine?  I was taught to do that.  It helps the smoke stick.  A "Pelical" was the term.

Taste the meat, not the heat  :haha:  I have propane too and have come close to buying a smoker, but I'm not that good at planning ahead.  I don't often get home from work until around 7, and it sucks to have to wait much longer for dinner.  May trade a brick of .22 for a smoker from a guy at work, so hopefully I can catch some salmon this year to try!  Probably going to get a smoker kit for the propane bbq and see how that works, too.

Even a decent cheap smoker is worth the money.  Around here, alot of guys start out with the little chiefs, and graduate into larger ones. 

And Nate, smoking meats is something you can't rush.  If you know you will have a day that you know you won't leave home, get what you want a couple days ahead, and prep them the evening before, and get up early and fire it up.  Clean the garage, wrench on the bike/truck, and just periodically check the temp, and add more charcoal or wood.  Wait for the temp probe to alert you, wrap, rest and eat!

Smoking meat gives me a lazy excuse to just hide in the shop, drink beer, and chill.

What's up fellas?
I'm still alive, been busy. Haven't been doing any comps this year. My partner works a rotating on-call schedule so he doesn't have much time anymore......still Q'n from time to time at the house and I've done quite a few wedding/party events.

off subject but I'll be buying a brand new 4 door tacoma soon. Really looking forward to it  :)

I haven't been doing much.  Just some BBQing when I can.  I bought the biggest freaking Tri Tip last week.  It took me 3 days of leftovers to finish it, after the first night with the family.  It took up a 1/4 of my grill.  But it was sooooo yummy!!  I got a pict of it.  Just need to spend some time with flashcards, and the comp. 

Been super busy outside, and no time on computer.

I've probably averaged cooking something once a week or so.  Cooked the absolute best chicken thighs I've ever made, grill or pan/oven.  So tender and juicy that I was convinced my meat thermometer was broken, definitely not the burned and dry pieces I am used to making.

Haven't pulled off any decent red meat yet, but pork has been coming out ok for me.  I just have a bad habit of going off to do something else and thinking it's time to check the grille several times before actually going back out.  I was working in the garden this time and just checked back often

on the menu tonight will be Salmon, NY Steak, Bacon wrapped Shrimp, Chicken Apple Sausage Salad (for the ladies :yupyup: ) Taters and some fresh smoked veggies, if I remember I will get some pictures so ya all can :drool:
