Dave, mozzarella doesn't age out to well. Its what we call a "young" cheese. But it can be smoked. It's a little tricky. We have experimented with it here at the plant, with mixed revues. It's one that will need to be tried with many different woods to find the one that works well.
I emailed Shane (Shamb) and he said he has been REAL busy with things. And hasn't had much free time.
