I'm pretty sure that's where the needle is on my 82 durring normal hiway driving, with the stock rad, so most likely you've made progress. I'm in south Texas, so the outside temps are not as bad, but close enough (100+) to compare with.

Mine is with the a/c blowing too. And yours?

I know this is a laaaate update. I've been driving on the freeway, off the freeway, A/C  running, stop and go traffic, you name it. It  runs great, stays cool and the A/C stays cold now.  All of this in a constant 100-120 degree days in AZ. Summary, 3 core radiator, new silicone in the clutch fan, proper (factory fan shroud) and factory t-stat.

Very nice!  Amazing how much difference a nice fat 3 row makes in a first gen.  I'll probably cry if mine ever takes a dump.  You'll find you can lose a fair amount of fluid and still be quite cool, whereas with the stocker you can only lose a little before it starts getting pissy.
RIP KYOTA

You can go through life being scared of the possible, or you can have a little fun and tease the inevitable.

Give a man venison, he'll eat for a day. Teach a man to hunt Blacktail, he'll be frustrated for life!
