So what is considered rediculous? Last summer I drove my truck around with no doors, fenders or hood. Would this be a ticket in Cali?
Only for no fenders. It considered "open wheel" Unless the vehicle was originally designed as an open wheeled vehicle it is not allowed. How the exception of Hot Rods plays out, I'm not sure. Maybe because that's how they were considered as being built.
To be more specific on that law; you must have AT LEAST 2 mirrors, one of them must be the drivers side mirror.

The one on the windshield or pass. door are not required together but you must have one or the other.
