Yeah Ive done that before but not on the crank pulley bolt, its a pregnant dog but if you can get like a Dremel type tool you could carefully grind the edges flat, your idea about the 6 point might work too, the only thing about welding on a nut is would the weld hold up to that much torque or pressure if its that tight
