Lookin sweet! You could start a business, dude. I can see it now, 5 years from now you'll be publishing a biograghy telling of your humble beginnings rebuilding carbs in your kitchen. It's the American dream!
I've rebuilt some Holleys before (not in the kitchen, tho) and it's actually a pretty enjoyable process. Them old cork gaskets are a pain to get off. One time I had to soak the parts in laquer thinner for a few days.
