i could be wrong, but i shoot everything in RAW, and then change it to black and white with a B&W adjustment layer in PS.  This allows for independent adjustment of each color to its respective shade of grey.  Theres a bunch of different ways to do it, but i would stay away from just desaturating it...this tends to flatten everything out and destroy contrast.
I agree, here is how I do it:

1. Open your image
2. Create 3 duplicate layers, name them "Red", "Blue", "Green"
3. Make sure the layers are in this order top to bottom: Red, blue, green, original
4. PP each layer like it is a final edited image by itself
5. Turn off all layers except Green
6. Image>Adjustments>Channel Mixer
7. Select Monochrome at the bottom of the Channel Mixer window
8. Make the following values: Red=0, Green=100, Blue=0
9. Hit OK
10. Turn off all layers except Blue
11. Image>Adjustments>Channel Mixer
12. Select Monochrome at the bottom of the Channel Mixer window
13. Make the following values: Red=0, Green=0, Blue=100
14. Hit OK
15. Change layer style of "Blue" to LIGHTEN
16. Turn off all layers except Red
17. Image>Adjustments>Channel Mixer
18. Select Monochrome at the bottom of the Channel Mixer window
19. Make the following values: Red=100, Green=0, Blue=0
20. Hit OK
20a. Change layer style of red to DARKEN
21. Turn on layers Red, Blue, Green (keep original off)
22. LAYER>MERGE VISIBLE (do not flatten)
23. You can now delete the original layer
24. PP your final B&W...and done.

EDIT: I use PS7, so your method may be different depending on your software.

Some recent shots. My photography class is making us do a series shoot. My series sucks pretty much because I'm forced to go find things to shoot and find a way to relate them to each other. I'm more of a documenting photographer. Unless I'm doing something other than normal day to day things or I'm on a vacation or there's a particular event that I care about and want photos of, I have no motivation to shoot. Therefore, I took photos of my dirty, stock, old rusty truck. The series sucks but whatever. It'll most likely get me an A since my instructor is as liberal as they come and almost every photo is a good photo so long as you can prove it. And what's the famous saying? So long as it's something you like it doesn't matter if anyone else likes it.

lol unless you're relying on making a profit off of it :greengrin:

That last pic is actually one I took a couple years ago after the bf and I finished rebuilding my motor. Back when it was still carb'd. My instructor liked it so much she's letting me use it in my series (which is supposed to be all new material). haha

The subject of the image is cut off on the left, right and bottom. There is a "dog nose" effect which warps the lines on the truck. You can't see the details of the shadows at all.
Kinda looks like a picture you would upload to autoshopper.com or something.
Try backing up about 20 feet, place the truck in the enviroment that it is used (street or offroad) not in the driveway.
Make your subject jump out at the looker.

Pelican in flight, slow shutter speed turned it in to a blur. I actually didn't even notice it when I was shooting. Oops :gap:

So do I, but I've also been there where I was 100' from the bridge and couldn't see it through the fog. That sucked.
