After some tinkering and replacing the automatic choke with a manual, i re-jetted this thing back to 120 and it is very happy again.  Pulls well in all gears and last tank was 16mpg.  I think I am done with tweaking for now!

Thanks for trying this thing out and for posting your solutions to the issues.  It's good to know.  For what its worth, I've also had good luck twice with stock rebuilt carbs from Guaranteed Carburetors out of FL.  I have to deal with smog BS here, so I can't delete anything and they've worked out great.
